Ingredients
- 12 large eggs
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon pickle relish
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup panko breadcrumbs
- 1/2 teaspoon paprika
- Oil for frying
Instructions
- Hard-boil the eggs for 10 minutes; cool in an ice bath.
- Mash the yolks with mayonnaise, mustard, relish, salt, and pepper until creamy.
- Fill the egg whites with the yolk mixture.
- Dredge each filled egg in flour, dip in beaten eggs, and coat with panko.
- Heat oil to 350°F (175°C) and fry eggs for 1-2 minutes on each side until golden.
Notes
Tip: For extra crunch, use panko breadcrumbs and fry fresh for the best flavor!
