Ingredients

  • 45 medium russet potatoes, peeled and cubed
  • 4 cups chicken or vegetable broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • Salt and pepper to taste

Instructions

  1. In your slow cooker, combine cubed potatoes, onion, garlic, and crumbled bacon. Pour in the broth and season with salt and pepper.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  3. Mash the potatoes slightly for a creamy texture. Stir in the cream cheese until melted, then mix in the cheddar cheese.
