Hearty Homemade Lasagna Soup

This comforting Homemade Lasagna Soup brings all the flavors of traditional lasagna into a warm, hearty bowl. Perfect for busy weeknights, this easy recipe is a family favorite!

Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 8 ounces lasagna noodles, broken
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat for 5-7 minutes. Drain excess fat.
  2. Add onion and garlic, cooking until the onion is translucent (3-4 minutes).
  3. Stir in crushed tomatoes, beef broth, oregano, and basil. Bring to a gentle boil, then simmer for 15 minutes.
  4. Add the broken lasagna noodles and cook for 10-12 minutes until tender.
  5. Stir in ricotta cheese, and season with salt and pepper. Top each serving with mozzarella cheese.

Notes

  • For extra flavor, feel free to add veggies like spinach or mushrooms.
